Trent at The Simple Dollar reminded me in a recent post that MIT offers free lecture notes, exams, and videos. I thought I'd look around and see what had been added since my last visit and found two courses that might interest you lot:

Cherry-Oat Bake

I help lead a craft group at my church on the first and third Tuesdays of the month. I have also taken on the unofficial role of the provider of goodies at said meetings. This last Tuesday I hadn't been to the store in ages, wouldn't have an opportunity to go before the meeting, and didn't have enough forethought to push the duty off on someone else. So... I ate from my pantry! :)

Cherry-Oat Bake

Ingredients:

2 cups whole oats
1 cup honey
2 tbsp whole wheat flour
2 tbsp butter
4 eggs
1 tbsp cinnamon
1 can cherries in water

Directions:

Mix everything together. hahaha!!! oh yeah, leave out the water from the cherries. And bake in a pie plate on 350 until it sets. Tastes best either cold or hot with vanilla ice cream on top.


Pantry Plus - Marshall's Tomato Pie


We hoped to have tomatoes this Summer but unfortunately the birds ate the plants early in the Spring. Thankfully we've got plenty of local farmers to purchase from and support.

I've titled this "Pantry Plus" because the only "from the pantry" items are the ingredients for the crust, but it is still an extremely frugal Summer meal with relatively few ingredients. I think I'll try to post "Pantry Plus" meals regularly, what do you think?

We had this pie for the first time at the home of our good friends, the Marshalls. They couldn't believe we'd never heard of Tomatoe pie, and now I can't imagine a Summer without it. I immedietly committed the basic recipe to memory and thought I'd share it with you. You may like your veggies more well done that I do - modify to please. :)



Ingredients:

Pie Crust (mine was made from scratch with a recipe from the book pictured above - From Pantry to Table by Marlene Spieler. You could use a store bought pastry shell.
1 onion
3 medium-large tomatoes
1/2 cup mayo
handful of grated cheese - any kind.

Directions:

Spread pie crust out in pie pan.
Preheat oven to 350 degrees.
Slice Tomatoes and lay out in crust.
Slice onion into rings and spread out over tomatoes - I use 1/2 an onion since my husband isn't a fan.
Spread thick layer of mayo over onions.
Bake for 20 minutes, then sprinkle cheese over top. Place back in oven until cheese is melted and beginning to brown.

Blog Award

I've been quite busy recently preparing for a week long trip to Denver. My husband prefers not to cook, so I've been cooking ahead of time to make his life a little easier - the withdrawal from me and our little boy will be hard enough. haha! Expect some good ideas to pop up on here soon! I'm going to post date entries so that they appear while I'm gone.

I've seen the award elsewhere and read that it should be given to 7 other blogs of my choice. It's hard to choose just 7, but I'd be here all day if I chose many more! So here are a few I haven't posted about before:

Bittersweet - This is one of my all-time favorite blogs in any category - mostly because she covers so many (categories). In addition to amazing recipe (especially baked goods) and food photography to die for, she's got a ton of free patterns for knitting, chrocheting, and sewing. That's a Jill of all trades!

Cheap Healthy Good - It's not hard to see why this blog would be among my favorites. My focus here is primarily "cheap." I love finding things on this blog that are good and good for me! An organized posting schedule also makes this blog fun to follow.

Frantic Home Cook - What a wealth of information!! And the style and personality of the site make it a must-see, not just an RSS feed read. :) I especially love her wonderful photo-captions!

Let's Get Wokking - I enjoy all of WokkingMum's blogs, but especially this one. Honestly, most of her foods looks too delectable for me to attempt - but I aspire to be like her!

Nook and Pantry - The name of this blog alone makes me feel like we are kindred spirits, but oh! what content! And organized to boot! Recipes, how-to guides, a series of posts specifically about pantry ingredients, and her layout is simple and adorable.

My Wooden Spoon - More than a blog! Along with yummy recipes you'll find a newsletter, giveaways, and a grand store to rummage through.

The Peanut Butter Boy
- This blog is a recent addition to my favorites. I love the rotating funny sayings that pop up when the page loads. And I love that he is a male food blogger! Way to go! As you can imagine, you'll mostly find peanut butter recipes here, with a few surprises thrown in. Peanut Butter & Pomegranate stew with edamame bulgur anyone?
